DIY: Microwave Food

Macaroni and Cheese

Ingredients:

  • ½ cup  macaroni
  • ½ cup water
  • ¼ tsp salt
  • ¼ cup milk
  • ¼ to ½ cup shredded cheese
  1. Combine pasta, water, and salt in a bowl.
  2. Microwave for 2 minutes, then stir.
  3. Continue microwaving in 2 minutes intervals for about 4 to 8 minutes, until your macaroni noodles get soft. 
  4. Stir in milk and cheese.
  5. Microwave in 30 second intervals for 1 minute. Stir between each interval.
  6. Enjoy!

Scrambled Eggs

Ingredients:

  • 2 eggs
  • 1 tbsp salsa
  • 1 tbsp shredded cheese
  • Olive oil or cooking spray
  • Salt and pepper
  • Optional: chives
  1. Coat your mug with olive oil or cooking spray.
  2. Add the eggs and whisk.
  3. Add the salsa, cheese, salt and pepper. Whisk until combined.
  4. Microwave for 1 minute.
  5. Stir and microwave for 45 seconds.
  6. Garnish with chives and serve.
  7. Serve with a side of fruit for  a nice balance.

Mushroom Risotto

Ingredients:

  • ½ tbsp butter
  • ½ onion finely chopped
  • 1 garlic clove, finely chopped
  • ¼ cup rice
  • 2 tbsp broth
  • Mushroom
  • Parmesan
  1. Add ½ tbsp butter and spoonful of onion in a bowl.
  2. Microwave for 1 ½ minutes in 30 seconds intervals. Stir between each interval.
  3. Add the garlic, rice, and broth. Cover loosely with plastic wrap and microwave for 2 minutes.
  4. Stir and microwave for 2 more minutes.
  5. Add the mushroom and parmesan. Microwave for 1 minute.
  6. Serve topped with shredded cheese, and optional green onions.
