“Spook-It-Yourself” Week Two: Recipes

Are you sick of eating the same boring food all the time? Here are some fa-“BOO!”-lous recipes so you can have a party in your stomach!

Pumpkin Spice Cupcakes

Ingredients (two dozen): 

  • cupcake liners
  • 3/4 cup butter, softened
  • 2 1/2 cups sugar
  • 3 large eggs
  • 1 can (15 ounces) pumpkin puree
  • 2 1/3 cups all purpose flour
  • 1 tablespoon pumpkin pie spice
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 3/4 teaspoon salt
  • 1/2 teaspoon ground ginger
  • 1 cup buttermilk

Frosting:

  • 1 package (8 ounces) cream cheese, softened
  • 1/2 cup butter, softened
  • 2  cups confectioners’ sugar
  • 1 teaspoon vanilla extract
  • 2 teaspoons of ground cinnamon

Directions:

  1. Preheat oven to 350 degrees. In a large bowl, mix butter and sugar until light and fluffy.
  2. Add eggs one at a time, mixing well after each one. Then add the pumpkin.
  3. In another bowl, combine flour, pie spice, baking powder, cinnamon, salt, baking soda and ginger.
  4. Add a part of the dry ingredient mixture to the first bowl, and mix alternately with buttermilk until you use it all up.
  5. Fill the cupcake liners with the mixture three-fourths full.
  6. Bake thoroughly for 20-25 minutes or as needed.
  7. Let it cool for ten minutes.
  8. For frosting, in a large bowl, stir cream cheese and butter until fluffy. Add confectioners’ sugar, vanilla and cinnamon and beat until smooth.
  9. Frost cupcakes and refrigerate leftovers.

Chocolate Pretzel Pumpkins

Ingredients: 

  • pretzels
  • green M&Ms
  • orange candy melts

Directions: 

  1. Put desired amount of candy melts in a bowl and put it in the microwave until needed or according to package.
  2. Cover pretzels with candy melts and place them on parchment paper.
  3. While still wet, place a green M&M on the top of the pretzel with the sides facing up.
  4. Let dry.

Graveyard Pudding Cups

Ingredients:

  • pudding cups
  • oreos
  • ghost or tombstone Peeps

Directions: 

  1. Remove the frosting from the Oreos and crush them in a Ziploc bag.
  2. Place a layer of crushed Oreo over the pudding.
  3. Insert desired Peep on top and other toppings to decorate.
