DIY: Lunch Bentos

Teriyaki Chicken

Ingredients:

  • ⅛  cup soy sauce
  • ⅙ cup orange juice
  • 1 ½ tbsp honey
  • 1 tsp sesame oil
  • 1 lb chicken
  • 1 tbsp cooking oil
  • ½ tbsp butter
  1. In a bowl, whisk the soy sauce, orange juice, honey and sesame oil.
  2. Cut the chicken into 1 inch pieces and let them sit in the marinade for 20 minutes.
  3. Pour oil into a pan and cook the chicken thoroughly. Reserve the marinade for later.
  4. Remove the chicken from the pan and place onto a plate.
  5. Pour the rest of the marinade and butter into the pan. Bring to a boil and stir consistently until slightly thickened. Add the chicken back into the pan and stir to combine.

Roasted Butternut Squash

Ingredients:

  • Half of a small butternut squash
  • Olive oil
  • Salt and pepper
  1. Preheat oven to 400 degrees fahrenheit.
  2. Cut the butternut squash into 1 inch cubes.
  3. Place squash in the pan and drizzle with olive oil, salt, and pepper.
  4. Roast for 25 to 30 minutes or until tender.

Apple and Walnut Salad

Ingredients:

  • 2 cups chopped lettuce
  • Half of one small apple, thinly sliced
  • A handful of chopped walnuts
  • 1 tbsp of feta cheese
  1. Combine the lettuce, apple and walnut in a bowl.
  2. Sprinkle with feta and enjoy.

Ham Eggroll

Ingredients:

  • 3 eggs
  • 2 tbsp cooking oil
  • 2 tsp sugar
  • 1 tsp soy sauce
  • 1 tsp mirin
  • 1 piece of ham
  1. Crack your eggs into a bowl and whisk entirely until the mixture is yellow.
  2. Add the sugar, soy sauce and mirin, and whisk until combined.
  3. Pour oil into the pan and add a thin mixture of the egg mixture into the pan. Rotate the pan to cover the entire surface.
  4. After the sides of the eggs are cooked and a majority of the surface is cooked, place your ham in the middle and using a spatula, roll the egg from one side to meet the next.
  5. Remove the roll and cut into smaller rolls.

Sesame Rice

Ingredients:

  • 1 cup rice
  • 1 tbsp sesame seed
  • ¼ tsp sesame oil
  • Salt and pepper
  1. Cook your rice according to the box instructions.
  2. Fluff the rice with a fork.
  3. Toss it with sesame seeds and oil. Season with salt and pepper.
