DIY: Healthy Summer Snacks

Blueberry Frozen Yogurt

Ingredients:

    • 3 cup plain 2% reduced fat greek yogurt
    • 2 cup half-and-half
    • 1 cup sugar
    • 1 ½ tsp vanilla extract
    • ¼ tsp salt
    • ½ cup blueberry preserve
    • 1 ½ cup blueberry
    • ¾ cup rock salt
  • Ice

Steps:

  1. Whisk the greek yogurt, half-and-half, sugar, vanilla extract and salt together in a bowl until the sugar is dissolved. Afterward, add the blueberry and blueberry preserve to the mixture.
  2. Pour the ice and rock salt into a separate large mixing bowl. Place the bowl with the mixture on top of the bowl with ice and rock salt.
  3. Use a hand mixer to whisk the mixture for 10 minutes or use a hand whisk to whisk for 15 minutes.
  4. Place both bowls exactly as they are into the freezer for 45 minutes.
  5. Take the bowls out and whisk the mixture again for about 5 minutes.
  6. Cover the mixture with plastic wrap and make sure that the plastic wrap is touching the surface of the mixture.
  7. Freeze for two hours or overnight before serving.

Banana Sushi

Ingredients:

  • 1 banana
  • Nut butter
  • Optional: nuts, chia seeds, etc.

Steps:

  1. Spread the nut butter all over the banana.
  2. Sprinkle on your toppings and cut the banana into 1-inch pieces.
  3. Serve immediately or place in the freezer to serve later as a frozen treat.

Watermelon Granita

Ingredients:

    • ½ medium-size watermelon
    • ¼ cup lime juice
    • ¼ cup sugar
    • ¼ tsp salt
  • Optional: ¼ tsp ground chile powder

Steps:

    1. Blend the watermelon, lime juice, sugar, and salt in a blender until it’s smooth.
    1. Pour the mixture through a sift to get rid of the solid pieces.
    1. Place the mixture into the freezer for 30 minutes. Use a fork to scrape and break the frozen pieces and place back in the freezer. Continue to do this for every 30 minutes for about 2-4 hours or until the mixture has the consistency of shaved ice.
  1. Serve immediately.
