Refreshing fruity snacks for the summer

Strawberry Shaved Ice

Ingredients

  • 1 1/2 cups strawberry
  • 2 tbsp lemon or lime juice
  • 3/4 cup water
  • 3/4 cup sugar
  • Ice
  • Optional: condensed milk 

Instructions

Making the Syrup

  1. Place the strawberries in a blender or food processor and blend until pureed.
  2. Pour the mixture into a saucepan and add lemon/lime juice, water and sugar. 
  3. Cook over medium heat and stir occasionally until it boils. Turn down the heat to medium-low and let the mixture continue to simmer for five minutes before removing from heat.
  4. Let the syrup cool completely.
  5. Strain with a fine-mesh strainer to remove all the seeds and pulp. You can use the syrup immediately or store it in the refrigerator. (It’s better if it’s chilled).

Making the Ice

  1. You can either blend the ice or use a shaved ice machine.
  2. If you are using a blender, blend a couple of cubes at a time. Pulse a few times at the highest speed before blending on high.

Place shaved ice in a bowl and pour syrup until coated well and serve! Add a drizzle of condensed milk for extra sweetness.

Dole Whip

Ingredients 

  • 2 cups frozen pineapple
  • 1/4 cup milk of choice (canned coconut milk for piña colada soft serve)
  • 1/16 tsp salt
  • 2 tbsp sugar of choice
  • 1 tbsp lemon juice

Instructions 

  1. Blend all the ingredients until smooth.
  2. If the ice cream is a little watery, place in the freezer for 20 minutes prior to serving.

Blueberry Ice Cream

Ingredients

  • 1 cup frozen blueberries
  • 1/4 cup milk 
  • 1 tsp sugar 

Instructions

  1. Pour milk into your container (about a quarter of the container).
  2. Add sugar as well. 
  3. Using a fork, mix and smash blueberries until the mixture is well combined and slightly chunky.
