Mother’s Day: breakfast in bed recipes

Mother’s Day is a special day to remember the hard work that our moms do everyday for us.  It’s only fitting that the favor is returned, so here are some recipes to make your mom feel extra special!

1. Hash Brown Cups (yields 12)

Ingredients:

  • 20 oz. frozen shredded hash browns (thawed)
  • 12 eggs
  • 1 ¼ cup shredded cheddar cheese
  • 1 tbsp. olive oil
  • salt and pepper to taste
  • extra toppings

Directions:

  1. Combine the hash browns, olive oil, salt, pepper and 1 cup of the cheddar cheese in a bowl. Save the remaining ¼ cup for later.
  2. Divide the mixture into a 12-muffin tin. Press the hash browns down to form a cup shape. Bake at 400F for 20 minutes.
  3. Once the cups are finished baking, crack an egg into each cup and sprinkle salt, pepper and the remaining cheese on top. Bake again at 350F for 13-15 minutes.
  4. Remove the cups when they’re finished baking and serve with your desired toppings!
  5. Pair it with some orange juice, fresh fruit or any other side to complete this delicious meal!

2. Classic Buckwheat Pancakes with a Twist

Ingredients:

  • 2 eggs
  • 250ml skimmed milk
  • 1 tsp vanilla extract
  • 200g buckwheat flour
  • 1½ tsp baking powder
  • 1 tsp ground cinnamon
  • spray oil
  • strawberries
  • raspberries
  • natural yogurt
  • maple syrup

Directions:

  1. Combine all the wet ingredients: the eggs, milk, and vanilla extract.
  2. Then combine the flour, baking powder, and cinnamon in separate bowl.
  3. Slowly add the wet ingredients to the dry while mixing.
  4. Leave to rest for an hour.
  5. Pour a spoonful of batter on a medium-heated pan and flip when golden brown or when bubbles start to form. Repeat for all pancakes.
  6. Add your fruit of choice, a tsp. of yogurt, and maple syrup on top to finish it off.
  7. You can add optional items such as orange juice, eggs, bacon, or a fruit salad.

3. Ham, Egg and Cheese Bread Bowls (Serves 4)

Ingredients:

  • 4 bread rolls
  • 4 small slices of ham
  • 4 eggs, at room temperature
  • ½ cup shredded mozzarella cheese
  • 1 tbsp fresh parsley, finely chopped (optional)

Directions:

  1. Preheat oven to 350F.
  2. Cut the tops off the bread rolls. (Make sure to use lunch sized rolls.) Scoop out the center and keep it aside.
  3. Line the bread bowl with a layer of ham and crack in an egg. Top each with 2 tbsp of mozzarella cheese and a sprinkle of parsley (optional).
  4. Put the top back on each roll. Wrap with foil and place in oven to bake for 10 to 15 minutes depending on how cooked you want your yolks to be.
  5. Remove from oven, unwrap and serve immediately.
